Thai King Crab Salad
Serves 4
Ingredients
120g Alaskan King Crab Meat
A wedge of lemon
8 leaves of Thai Basil
8 leaves of Coriander
8 leaves of Mint
20g Glass Noodles
10g Wombok
2g Unsalted Peanuts
5g Bean Sprouts
5g Snow pea Shoots
Dressing
5ml Fish Sauce
5ml Lime Juice
5ml Olive Oil
5ml Mirin
5ml Sweet Chili Sauce
Method
Start by soaking the glass noodles in a bowl of hot water for 10 – 15 min & leave to the side. Thinly shred the Wombok & place into a bowl. Tear the mint, coriander & basil & add it to the bowl with the Wombok. Tear the bean shoots & bean sprouts add to the bowl & mix together roughly. Crush the peanuts with a knife & add to the bowl. Place to the side. In a small bowl place equal parts of fish sauce, mirin, sweet chili sauce, lime juice & olive oil, beat with a fork & place to the side. Strain the glass noodles and add to the bowl with the herbs and Wombok. Pour over the dressing to taste & serve in a large bowl. Finish with the Alaskan King crab meat on top & a lemon wedge.
